Easy-peasy Cream Cheese
Because there are healthy solutions easier than we think!
After my oat milk recipe being a total success, I want to bring you another easy recipe.
I have to be honest, although I stopped drinking cow milk for some years now, dairy was never completely out of my life, as I'm a huge cheese fan. Everything that has cheese, is a win for me!
What I'm bringing today is not dairy-free, but it's a way of eating "healthier" cheese.
All you need is:
1 package of Greek yogurt (I used fat-free)
pinch of salt
Food Strainer or cheesecloth
(optional) herbs or ground pepper
Start by placing the cheesecloth in the recipient. Add the Greek Yogurt and place it in the fridge overnight. The yogurt will lose water and get a solid consistency. Just make sure the water does not touch the cloth. If necessary, through the water away from time to time.
Once solid, add a pinch of salt and any flavour you would like your cream cheese with, chopped herbs, ground pepper, you choose!
Et voilà! All done! Easy right?
If you are vegan, replace the yogurt by cashews, soak them overnight, and then blend them with lemon and salt until creamy and add your toppings. Enjoy,
